February 2019 Entry – Sweet Potato Chili

It is the most popular question asked every February 2nd…will Phil, the famous groundhog, see his shadow predicting 6 more weeks of winter weather? For this Texas gal, I am glad he did NOT! Bring on the sunshine and shorts weather please!

Nonetheless, February is typically one of our colder months, and nothing warms the body up like a steaming bowl of chili. Which brings up another debated question…beans or no beans? Personally, I don’t have a preference just as long as you save some for me! I could eat chili every single day of winter and never tire of it because there are so many variations. I love experimenting with different combinations of meat, veggies and seasonings.

My recent favorite came about from trying to incorporate more sweet potato recipes in my diet (that don’t include marshmallows!). Did you know that sweet potatoes are beneficial in treating inflammation, bronchitis, asthma AND arthritis? The combination of beta carotene, magnesium, iron, complex B vitamins and phosphorus make this tuber a clear winner for super foods!

Sweet Potato Chili

Ingredients:
20 oz lean ground turkey
1 small onion, chopped
2 cloves garlic, minced
10 oz can of Rotel (pick the level spice you prefer)
8 oz can of tomato sauce
½ – 1 cup chicken broth (depending on your thickness preference)
2 tbs chili powder
1 tsp cumin
1 tsp smoked paprika
1 tsp oregano
2 tbs olive oil
1 large sweet potato, peeled and diced into ½ cubes

Instructions:
1. In large, deep skillet (or soup pot), sauté onion, garlic and turkey with 2 tablespoons of olive oil, breaking up the meat as it cooks.
2. When meat is cooked, add the chili powder, cumin, smoked paprika and oregano and stir to combine
3. Add Rotel, tomato sauce, sweet potato and ½ cup chicken broth (adding more later if you want the chili a thinner consistency)
4. Stir to combine and then simmer for about 25 minutes until potatoes are soft.

NOTE: This chili is delicious topped with any combination of shredded cheese, chopped green onions, diced jalapenos and/or sour cream!
